UK Milk Utilisation

UK Milk Utilisation

  • Milk utilised for liquid stood at 563m litres in February 2012, an increase of 26m litres (4.9%) compared with the previous year.  Year-to-date totals are up by 2.2%, an increase of 47m litres.
  • Milk for cheese utilisation was 284m litres in February, which was 5m litres (1.9%) up on February last year, with year-to-date utilisation of milk for cheese up by 2.2% to 582m litres.
  • Cream utilisation was up by 11.7% on February last year to 20m litres, while yogurt utilisation was down by 5m litres (19.9%) to 20m litres.
  • Butter utilisation in February was up on last year's figure by 34.4% at 24m litres.

Utilisation of Milk 2010/11

In 2010/11 (when compared with the previous year):

  • More milk was utilised in the manufacture of liquid, butter, cheese, powders and yogurt.
  • Less milk went into the manufacture of condensed products and cream and less went into wastage.
  • 2010/11 had the highest levels of UK milk production since 2006/07, which affected production of dairy products. For more information on milk production click here.

Provisional figures for the 2010/11 year show that 6.8bn litres of milk were utilised for liquid, 2.2% higher than in the previous year. 320m litres of milk were utilised for yogurt production, an increase of 5.7% on the previous year. Milk utilised for both butter and cheese increased by 6.6% respectively in 2010/11 compared to 2009/10, to 251m litres for butter production and 3,610m litres for cheese production. More milk was utilised for powder during the 2010/11 year compared with the previous year as well, with 1,206m litres utilised, an increase of 26.9%.

Condensed products showed a fall on 2009/10 figures for milk utilisation, decreasing by 7.8% to 281m litres. Milk utilised for cream was also down, by 0.9% at 248m litres. There was also considerably less wastage in the 2010/11 year than the year previously, with only 49m litres being wasted, a decrease of 76.9%
